Last night's dinner

Hi Guys

Take a look at the delicious healthy meal I prepared last night.
isnt this just mouth watering? This is a twist to the original recipe from Shape Magazine by the way (discussed in previous post) . Shape Mag made theirs with Shrimp and spinach , but due to the lack of Shrimp I used chicken.

I was so excited to try this recipe. Mangoes and avocados are two of my favorite fruits and why not have the two together on a dish, right?

This dinner turned out so good that my honey ate twice. My toddler LOVED it as well.

My Colorful Salsa - 1/2 a Mango, diced tomatoes, red onion, cilantro, 1/2 avocado, lime, salt, pepper.

The dish Sophie and I ate together (with Couscous). We left 1/4 of the serving.A small amount can really fill you up.

I deboned two chicken breast and seasoned 2 hrs prior to grilling.
Seasoning: Ms Dash lemon herb seasoning, dried oregano leaves, lime, 1 teaspoon of home made garlic paste, salt and pepper

Separately I diced the mango, tomatoes, red onion, cilantro and avocado. Add a dash of salt and squeeze 1/2 lime. Let is marinate for about 30min.

Prepare your side . It can be sauteed spinach, couscous, rice ( preferably brown), broccoli....just make it healthy and remember your portions.

Grill your chicken until you get a nice golden color. Top it with your salsa and add your side to the dish.
This is an easy, fast dinner that really made it to my list of faves.

I know that mangoes and avocados contain good fats, and mangoes are very sweet but control your portions. After all this is a home made Grilled dinner.
